INGREDIENTS:
- 9oz package precooked unseasoned diced chicken breast
- 15oz can chickpeas
- 1 small cucumber
- 4 green onions
- 1/4 cup fresh basil
- 1/2 cup plain fat-free yogurt
- 2 tbsp minced garlic
- Pinch of salt
- 2 cups baby spinach
- 1/3 cup feta cheese
- 4 lemon wedges
INSTRUCTIONS:
- Drain chickpeas.
- Peel and dice cucumber and dice green onions.
- Chop basil.
- Gently combine chicken breast, chickpeas, cucumber, green onions, basil, yogurt, garlic, and salt.
- Add spinach and feta to mixture.
- Serve garnished with lemon wedges to squeeze over salad.
