Low Carb Garbanzo Bean Salad

INGREDIENTS:

  • 9oz package precooked unseasoned diced chicken breast
  • 15oz can chickpeas
  • 1 small cucumber
  • 4 green onions
  • 1/4 cup fresh basil
  • 1/2 cup plain fat-free yogurt
  • 2 tbsp minced garlic
  • Pinch of salt
  • 2 cups baby spinach
  • 1/3 cup feta cheese
  • 4 lemon wedges

INSTRUCTIONS:

  1. Drain chickpeas.
  2. Peel and dice cucumber and dice green onions.
  3. Chop basil.
  4. Gently combine chicken breast, chickpeas, cucumber, green onions, basil, yogurt, garlic, and salt.
  5. Add spinach and feta to mixture.
  6. Serve garnished with lemon wedges to squeeze over salad.
